Squeeze limes immediately when bought, freeze juice in ice cube trays. Solves the “buy 1 lime, use 1/4, let it rot” problem.
The technique:
- Buy limes when on sale
- Squeeze all of them immediately
- Pour juice into ice cube trays
- Freeze
- Pop out 1 cube when recipe calls for lime juice
Storage time: 4-6 months frozen.
Cube size: 1 cube ≈ 1/2 lime worth (2 Tbsp).
Why this matters: Fresh lime juice is critical for Mexican Flavour Bridges. But buying 1 lime per meal is expensive and wasteful. This lets you buy 8 limes on sale ($4), freeze them, and have 16 uses ready.

Doesn’t work for: Lime zest. That needs fresh citrus. But zest is optional; juice is essential.
